Praline Cream Pie
Very rich and very good.
Praline:
1 stick butter
1/2 c. firmly packed brown sugar
1/2 c. pecans
Butterscotch Creme:
2/3 c. packed brown sugar
2 T. cornstarch
1/8 tsp. salt
2 c. milk
2 egg yolks
2 T. butter, softened
2 1/2 tsp. vanilla
1 9-inch baked pie crust
For praline mixture, combine all ingredients in small saucepan. Bring
to a boilover medium heat, stirring constantly. Pour into baked pie
shell. Cool until set.
In medium saucepan, combine brown sugar, cornstarch and salt. In
small bowl, combine milk and egg yolks; beat well. Gradually stir
into sugar mixture. Cook over medium heat, stirring constantly, just
until bubbly and thick. Stir in butter and vanilla, remove from
heat. Pour over praline layer. Refrigerate at least 4 hrs. before
serving. Top each serving with whipped cream. Serves 8.
