I forgot all about this recipe. But I ran across it today and decided to make. It is still delicious! I definitely recommend more chocolate chips than the recipe calls for
Pumpkin-Chocolate Chip Bread
1/3 cup unsalted butter
1 cup sugar
2 eggs
1 cup pumpkin
1 1/3 cups flour
1 tsp. baking soda
1/4 tsp. baking powder
1/4 tsp. salt
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1/2 tsp. vanilla
1/3 cup water
1/2 cup chocolate chips
Measure and mix together sugar and shortening in bowl. With a beater, beat eggs, one at a time, until fluffy. Add to sugar and shortening. Stir in mashed pumpkin. Add flour, baking soda and powder, salt, and spices. Mix in vanilla, water, and nuts. Stir just enough to moisten.
Spoon into a greased 9” by 5” pan. Bake at 350 degrees for 45-50 minutes.
Glaze: Combine powdered sugar, milk, and cinnamon.
