I love pumpkin, this is a must try since I love hummus too. Any idea how much 600 g is???

Pumpkin Hummus

600g pumpkin, peeled and chopped in large chunks

2 cups cooked chickpeas

2 Tbsp tahini

1 tsp ground cumin

1 tsp ground coriander

1 – 2 tsp chilli sauce

Juice of one lemon

4 cloves garlic, chopped

1 tsp sea salt

Place pumpkin in an lightly-oiled oven dish. Cover with foil. Bake in a moderate oven until soft.

When the pumpkin is cool, place in a food processor with all the other ingredients. Blend smooth. Add water to reach desired consistency.

600 grams is 21.16 ounces (roughly 1 lb, 5 oz)

I don't know if you were going to use fresh pumpkin or the canned. I have the large can of Libby's pumpkin:

29 oz (822 grams) is about 3 1/2 cups so,
1 cup is about 8 1/4 oz
21 oz is about 2 1/2 cups

You could just use the smaller can - although it's probably less than 2 1/2 cups, it might be close enough to the after-roasted weight of the fresh.
