2 cups all purpose flour
1/2 tsp baking powder
1 1/2 tsp salt
1/2 tsp sugar
1 1/2 tsp. vegetable oil
1 tbsp. evaporated milk
2 tbsp warm water
Shortening for deep frying
Stir flour, salt sugar & baking powder together in medium bowl. Mix oil, milk and water in small bowl. Add to dry ingredients and using your hands work the mixture into a dough and knead gently on a floured surface. It will remain slightly sticky. Allow the dough to rest for 30 minutes, then divide into 12 balls. On a floured surface roll each ball into a 10 inch circle 1/4 inch thick.
Heat shortening in a deep fryer to 400 degrees. Cut each circle into quarters and add four pieces at a time to the oil. Using spatula or spoon, fan hot oil over the top of each triangle, which will cause it to start puffing up. After 20 seconds turn and quickly brown the other side. Drain on paper towels. Keep warm in 150 degree oven while frying the remainder. Can make dough up to six hours ahead of time but must be fried at last minute.
