After reading the following recipe and the reviews posted on the King Arthur Flour's board, I made a couple of changes. First, I added a pinch of baking powder and a dash of salt. (I wondered if it was supposed to be made with self-rising flour.) Secondly, I changed the cooking strength and time. I baked it for 3 minutes at 50% power followed by 1 minute and 30 seconds on high. All of my microwave books say that when baking quick bread in the microwave, the first half of the baking should be done at 50% power and then finished on high. I didn't have any chocolate chips to add to the batter, so I omitted them. Third, I baked it in a Corning soup mug instead of a coffee mug.
It came out light and fuffy. It was tasty, but could have used a larger shake of salt and some icing or the chocolate chips.
5 MINUTE CHOCOLATE MUG CAKE
1 Coffee Mug
4 tablespoons flour(that's plain flour, not self-rising)
4 tablespoons sugar
2 tablespoons baking cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional) some nuts (optional)
Small splash of vanilla
Add dry ingredients to mug, and mix well . Add the egg and mix thoroughly.
Pour in the milk and oil and mix well.
Add the chocolate chips (if using) and vanilla, and mix again.
Put your mug in the microwave and cook for 3 minutes on high.
The cake will rise over the top of the mug, but don't be alarmed!
Allow to cool a little, and tip out onto a plate if desired. EAT!
(this can serve 2 if you want to share!)
