RECIPE: Rec: Rhubarb Cream Cheese Bars. I made these this morning

I love how you made these complex bars when you woke up in the am....This would take me all morning

to come up with the plan, and all day to bake. Let alone clean up. You make it sound so easy, and carefree....

Did they taste good? I am not really a sweet person, but the combo of the rubarb and the cream, caught my attention.

 
Oh barb...no..no..no..LOL! When I said this morning I meant

after I had my coffee and something to eat, checked my favorite sites online and watched TV until about 10 a.m. THEN I started about thinking about getting going. LOL You don't know me girl. But honestly, these are seriously easy. I mixed up the crust with my fingers, in the oven. Cut the rhubarb and put mixture on crust. Back in the oven. Mix up cream cheese mixture...add to oven mixture and back in the oven. Mixed sour cream mixture and poured on top. IN ONE BOWL! LOL They are really good barb, kinda feels like a cheese cake type and not very sweet. I'm going to add more rhubarb next time because that slight tartness is really nice.

 
Big hit! I even got asked if I had been a pastry chef. hahahah. I consider this simple fare, not

fancy pastry. but everyone loved the squares. I made the recipe twice, but had to modify since I had just 3 blocks of cream cheese. I used 1 1/2 for each recipe and added 1/2 cup of greek yogurt for the rest, and added vanilla to this custard mix. next time I will add some salt to the base, or use more salted butter. and I'm thinking some brown sugar with the rhubarb would be nice.

 
Vanilla would be perfect and I'll add that next time and I always

use unsalted butter so I just kinda add a pinch of salt. I just didn't think to say that. Did you increase the rhubarb a bit? It's super easy isn't it? Glad they liked it.

 
OK; you and Ang convinced me to give it a go.... If I can find Rhubarb; I will give it a whirl....

 
Ah good, you'll like it. Rhubarb is in season so I wouldn't imagine

you'd have any problem finding it. Let me know what you think of it if you make it.
