I had some old bananas to use up and cleaned out some other things as well to come up with this really tasty and very nutritious banana bread:
1 cup all-purpose flour
1/2 cup Teff flour
1/2 cup Amaranth flour
1/2 cup Kamut flour
1/2 cup wheat bran
1 tbls diastatic malt
1 tbls. wheat gluten
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 tsp nutmeg
1 tsp cinnamon
3/4 cup room temp butter
1 cup firmly packed light brown sugar
1/2 cup granulated sugar
1 tablespoon vanilla extract
1 tsp. lemon extract
3 large eggs
1 tablespoon freshly grated lemon zest
1 1/2 cups mashed ripe banana (4)
1/2 cup sour cream
1/2 cup chopped macadamia nuts
1/2 cup chopped pecans
1 cup coconut
1 cup candied pineapple, chunked
1/2 cup candied cherries
Sift the dry ingredients together
Cream butter and sugars, add extracts, beat in eggs and sour cream. Stir in flour. Stir in fruits and nuts.
350F oven for 1 hour for two large loaves. Start toothpick testing at 50 minutes. Grease and flour the loaf pans. Sprinkle oats or muesli on top of batter before baking.
I'm going to try dousing one of the loaves with a little rum. Should be good with the pineapple and coconut going on.
