This comes from Kayln's Kitchen, a food blog that specializes in South Beach food recipes. It's a very informative site, in general and the recipes provide for strict South Beach diets as well as non South Beach. I have posted this sited under Diet WOEs.

Roasted Broccoli with Garlic

1 bunch broccoli, about 1 1/2 pounds, cut into bite sized flowerets

3 T extra virgin olive oil

6-8 cloves fresh garlic

salt and fresh ground black pepper to taste

Preheat oven to 450 F. Cut broccoli into bite sized pieces, and peel and slice stems if large. Slice garlic cloves, and cut slices in half. Toss broccoli with olive oil, garlic, salt, and pepper, then spread on a baking sheet. Roast until broccoli is bright green and edges are starting to brown slightly, 20-30 minutes. Serve hot.

Note, my oven seems to run hot, so I roasted this at 400f and it was done in about 15 mins. I halved the recipe, but still used 6 garlic cloves and put in red pepper as well. This was really yummy!

Sounds good, Lin. (not as good as chocolate, though) smileys/smile.gif I think the

baking time is off in this recipe. I make roasted broccoli often, and it takes only 18 - 20 minutes at 400 F. And my oven is 100% accurate.

 
That looks really, really good, love roasted veggies, but remember this one?...

From Epi a while back, I love it with meals I do on the grill, starch on the steam line and this at room temp.

Rec: Broccoli with Garlic and Soy Sauce - the only way I'll eat broccoli from now on!
This is a recipe from the Barefoot Contessa
and its just delicious. The more garlic
flavor you can get into the oil the better.

Broccoli with Garlic and Soy Sauce

1 head garlic, peeled (about 16 cloves)
1 cup good olive oil
1 teaspoon crushed red pepper flakes
1 teaspoon kosher salt
4 stalks broccoli, cut into florets (8 cups
of florets)
2 tablespoons soy sauce

Put the garlic cloves and oil in a small
heavy-bottomed saucepan. Bring to a boil
and cook uncovered over low heat for 10 to
15 minutes, until the garlic is browned and
tender. Turn off the heat and add the red
pepper flakes and 1/2 teaspoon salt.
Immediately pour into a heat-proof
container to stop the cooking. Allow to
cool to room temperature. For the salad,
blanch the broccoli florets in a large pot
of boiling salted water for 2 to 3 minutes,
until crisp-tender. Drain well and immerse
immediately into a large bowl of ice water
until the broccoli is cooled. This process
stops the cooking and sets the bright green
color. Drain well. In a large bowl, toss
the broccoli with 1/2 teaspoon salt, 1/4
cup of the oil used to cook the garlic, the
soy sauce, and 8 or more cloves of cooked
garlic. Taste for seasonings and serve cold
or at room temperature.

Sez at the bottom it may be served cold, I've never had any left long enough to chill! I....

usually do it in the hour before dinner and serve room temp. Cannot imagine anything it wouldn't go with--I munch the garlic.
This and Josh's cauliflower popcorn are winners. I am also going to do the roasted brocolli, sounds good. I think I have roasted about every vegatable now except for shelled peas!
