RECIPE: REC: Roasted Green Beans with Onions - our family favorite!

Fantastic! Going to the market at lunch to get

the fresh beans.

Roasted vegetables are the best, aren't they? I'm going to give roasted cauliflower a break tonight and roast green beans. Now, why haven't I ever thought of roasting green beans before?

Any other vegetables that we don't think of as "roastable"? Cucumbers? Radishes? Lettuce (I know lots of people grill endive and radicchio)? Celery? Roasted Garden Salad? Peas?

Going to have to start throwing the veggies into the oven as the first step instead of getting the pot of water or the saute pan going.

 
Richard - one of my all time favorites is roasted brussel sprouts...

I've converted many a 'hater' into a lover. I will do a post on it later but, I must admit, not only do I add onions to it but I also add up diced bacon and just cook it all together. I make sure that I point all the little fellas so that their cut side is facing the pan.

Also loved butternut squash - that's coming soon to - that I cut into bite size chunks, sometimes add a bit of maple syrup when mixing tossing with the olive oil.

 
Now there's an idea I will be making this weekend...

Roasted Brussels Sprouts with Bacon! LOL Great idea! I'll add some onions to that too.

My normal sprouts method is to cut them half, single layer cut side down with olive oil in a skillet, cover, high heat until browned. Throw in minced garlic and a splash of balsamic, salt, and pepper, toss, cover and finish cooking for another minute or two, then a sprinkle of shredded parmesan once plated. These are VERY good. Can't wait to try roasted with bacon!

Also, I love roasting squash, pumpkins, sweet potatoes, all the fall vegetables. This is my time of year.

 
I *LOVE* roasted (sauteed) brussel sprouts! They're good with only S&P, as well as...

...deb's suggestions.

Shallot rings are good too.

I like them steamed, so roasted was a no-brainer for me. I think someone on this board turned me on to them.

This is absolutely wonderful...

In addition to the onions, I added an equal number of shallots because I love them. They were like little caramel bonbons tucked into the veggies. Overall, I will be going to this roasting method for fresh green beans as a first choice over boiling/steaming any day.

Roasted veggies are sublime.

 
remember to wrap up a packet of beans in foil to throw on the grill. same yumminess with the slight

charring of the beans and onions.
