We finally had our thanksgiving dinner last night and I made these. It was lucky I tasted them in the kitchen because by the time I got to sit down there were none left. I had doubled the recipe. I was a bit heavy on the red pepper -we like things spicy but even lighter they were great. I also did not shake in zip lock but used my fingers and spread them with the olive oil in the pan I used to bake them.

Holidays are coming and here is yet another sweet potato recipe. The thyme, garlic and red pepper gives great flavor to the sweet potatoes. Instead of olive oil try using Pam or No Oil. Just spray the slices on both sides then shake them in the zip lock bag with the herbs. Use Yams if you prefer.

SERVES 4 -6

4 medium sweet potatoes, peeled and cut into 1 1/2 inch rounds

3 tablespoons olive oil

1 tablespoon fresh thyme, chopped

3-5 sprigs thyme (to garnish)

3 garlic cloves, minced

1/2 teaspoon crushed red pepper flakes

Heat oven to 400 degrees F.

In a zip lock bag toss the sweet potatoes in the oil, thyme, garlic and pepper flakes.

Transfer to a rimmed cookie sheet.

Garnish with thyme sprigs and bake until tender, approximately 45 minutes.

Serve hot.

ROASTED SPICED SWEET POTATOES

1 teaspoon coriander seeds
1/2 teaspoon fennel seeds
1/2 teaspoon dried oregano
1/2 teaspoon dried hot red pepper flakes
1 teaspoon kosher salt
2 lb medium sweet potatoes
3 tablespoons vegetable oil

Preheat oven to 425°F.

Coarsely grind coriander, fennel, oregano, and red pepper flakes in an electric coffee/spice grinder or with a mortar and pestle. Stir together spices and salt.

Cut potatoes lengthwise into 1-inch wedges.

Toss wedges with oil and spices in a large roasting pan and roast in middle of oven 20 minutes. Turn wedges over with a spatula and roast until tender and slightly golden, 15 to 20 minutes more.

Makes 4 to 6 servings.

Note: I make up a batch of the spices and keep it in a jar for future use.
