Roasted Olives with Lavendar and Truffle Oil

- this is just awesome!!...

it's a variation on the recipe I posted for olive paste with lavendar and truffle oil and in MHO this version is far better. it got raves last night.

Roasted Olives with Lavendar and Truffle Oil

8 oz. imported whole black olives such as Alfonso or Gaeta*

1 tsp truffle oil**

1 tsp. food grade lavendar

1/4 cup olive oil

a pinch of crushed red pepper

preheat the oven to 350

in an 8 inch baking pan spread the olives,add the truffle oil and lavendar and mix. bake for 45 min, stirring the olives at least 3 times. cool before serving. I served these with Italian bread and fresh goat cheese as an appetizer.

* kalamatta olives worked just fine.

** when the olives cool, taste them and add more truffle oil if you like.

 
So Randi, tell me if this is how to do this....

I assume the olives are cut in half? Spread goat cheese on bread, top with olives? This sounds awesome! Do you serve the olives in a bowl with the sauce?

 
I'll edit the recipe. the olives are roasted whole and served in a bowl

with the oils from cooking. I served the bread with goat cheese on the side and didn't top with an olive. I'm not sure if anyone else put olives on top or not but there really isn't any right or wrong way with these. an antipasto plate, with dinner, whatever works smileys/smile.gif

didn't you have roasted olives at Linda's? I think she was more into making the paste but I can't say for sure.

BTW - olives roasted with garlic and fennel are really awesome too!

Randi, this sounds amazing! and another question...

I have a bag of lavender buds from my lavender flower heads. Is that the lavender you use for this recipe? I usually grind it up to add to my soap or flavor lemonade with it, would be great to have another culinary use for it.

Any other lavender recipes out there?

Oh, I also make a tea out of the lavender buds, put it in a spray bottle, and spritz sheets, towels, shirts before ironing, and the like with it. I always laugh at the $20 bottles of "lavender water" on sale at L'Occitane when they're practically free to make.

 
LOL, Richard, we sell L'Occitane products in the shop and I always wonder just

what people do with all that expensive lavender water. Does anyone really iron anymore? I think it just gets put on display in well-appointed laundry rooms.

In France a friend once made lavender cookies. I asked for the recipe but he said he had just made it up and couldn't repeat it. They were basically shortbread cookies with lavender buds added to the dough. They were very fragrant and tasty.

A local resturant used to do a peppercorn, creamy sauce with lavender for peppersteak. I remember it as being quite good and interesting, but not the way I would want peppersteak everytime, think it had cognac?

Oh, great idea on the lavender shortbread!

Thanks to both of you for the ideas and recipes.

I love L'Occitane's products, but really, the prices are just a bit too precious. It was interesting to see the prices in France. Around 1/2--1/3 less than they are in the US. But one is not buying only the product are they? The beautiful packaging and image are part of the purchase price as well. LOL

I rarely iron, but I spritz the towels and sheets with the lavender water before putting them into the dryer. Also spritz shirts and let them hang dry before wearing.

Used to use L'O's shave cream, but the price was so outrageous I tried Caswell-Massey's big tub o' almond oil shave cream and like it much better (especially when I find it at TJMaxx for $6 because the box has been damaged).

 
I don't think my friend used mint, but that might be an interesting touch....

Oh the L'O prices seem to go up a dollar per item with every order. It doesn't faze the fans, though.

I can't live without the liquid shea hand soap or the Eau de Badian cologne, but I leave those $20 litres of lightly scented distilled water for the true believers!

 
How do you all dry your lavender? I tried it once and it got all moldy. It doesn't help that

summers in L.A. are often foggy.

and saw Linda's Lavender version and will have to try that.

Question for anyone: Have you ever combined lavender with bittersweet chocolate? I was thinking about adding the lavender sugar to my meringues, which I traditionally put bittersweet chocolate in for Christmas. TIA!

 
olives, cooking with lavendar and yadda yadda

I love all the posts with lavendar, it really is a lovely addition to many things. for this season, poach pears in white wine and vanilla and some lavendar flowers. in the summer, when peaches are ripe, peel, slice and put in bowl. cover with chardonay or bubbly and add lavendar. let sit at room temp for a few hours, stirring occasionally. people go crazy over this and it's just soooo easy!

I was thinking of adding some lavendar to champagne, for sipping. I might try that over the next few days.

I've seen directions for making herbs de provance that includes lavendar. I'm looking for it so I can make the chicken recipe Joe posted. I'll post it later or tomorrow.

as for the olives, you use any combo of herbs and spices that strike your fancy. there's something about the roasting that just elevates them to new levels.

Joe, do you hang the fresh lavendar upside down? we're pretty wet here and mine dry OK. I've also used them fresh when I have them in the garden.

and Richard, Richard, Richard! ya just gotta stop posting all the fab stuff you do. you're ruining my husband's life here. you are replacing Antonio Banderas as my fantasy husband! "-)))

 
I tried hanging mine upside down, but it shed all over the floor. So I got a length of

petticoat mesh from the fabric store and hung the lavender in that. If you have humidity problems, try turning a fan on it.

I'm currently in the process of addicting my co-workers to my homemade herbal soaps, under-cutting the mall handmade soap peddlers by $5/bar. Heheheheheheh. Maybe I should add Lavender water to my burgeoning desk-side emporium? ; )
