Russian Sauce (Frosting for Angel Food Cake)
Amount Measure Ingredient -- Preparation Method
3 egg yolks1/2 cup sugar
1 large orange -- juiced (1/3 to 1/2 cup)
1 tablespoon orange rind -- grated
1 cup whipping cream -- whipped
1/2 cup toasted almonds -- chopped
Mix egg yolks, sugar, and orange juice in top of double boiler and cook over hot water stirring constantly until it thickens (about 20 to 30 minutes). Stir in orange rind. Cool.
Fold in whipped cream and almonds. (Fresh grated coconut can be substituted for the almonds.)
Use as frosting for angel food cake.
