Salmon with Chinese Pesto

2 lb salmon fillet

1 teaspoon minced garlic

3 tablespoons minced ginger

1/4 cup minced green onions

1/4 cup minced Chinese parsley

1/4 cupvegetable oil

1/4 teaspoon pepper

1 teaspoon shoyu

1 teaspoon sesame oil

Rinse salmon and pat dry, remove any small bones. Place salmon on a sheet of heavy foil large enogh to warp salmon in envelope style. IN a small bowll, combine remaining ingredients, rub mixture onto salmon. Wrap salmon filet in the foil and seal. Bake at 350 for 20-25 minutes or until salmon is just opaque in the center. Carefully open foil envelope to allow steam to escape. Makes about 6 servings.

Lisa's Notes - I whirled the pesto in a food processor, and did one packet of salmon and one of chicken - both delicious!

 
Dumb question, but what is Chinese parsley, and can I use Italian? or Cilantro?

Always looking for interesting new ways to make salmon up here in salmonland.
