1 c. chopped onion

1/4 c. goose fat

2 lbs. sauerkraut, rinsed well and drained

1 c. raw grated potato

1 tsp. caraway seed

4-5 juniper berries

1 tsp. tarragon

1 tsp. pepper

1/2 c. white wine

Cook onion in fat until tender. Combine cooked onion with rest of ingredients and mix well. Makes enough dressing for 8 to 10 pound goose.

Alt: omit goose fat and fry 5 slices of bacon to render fat. Proceed with bacon drippings instead of goose fat. Crumble bacon into stuffing.
