bottle of cardamon spice.

(Our little steel mill county...not a hot bed of using spices other than salt/pepper/garlic and hot sauce.

Me: So you liked the salmon?
Mom: What salmon?
Me: The fish you just ate.
Mom: I ate fish?
Me: Yes mom. That was on your plate with butternut squash, Brussels sprouts and mushrooms.
Mom: But it wasn't fishy?
Me: I know.
Mom: I ate fish?
Me. Yes. You ate the whole thing.
Mom. Fish that wasn't fishy? I liked it.

PS: I doubled the cardamom because I couldn't even taste it with 1/8 tsp.

 
I sent this to my daughter in AK and she made it

She recently got married and is learning to cook. Her husband is native Alaskan and he liked the recipe. So thumbs up from the salmon experts.
She also said it was a good idea to double the cardamom because otherwise the maple syrup is very dominant.

 
At 1/8 teaspoon for four servings you will need a lot more recipes!

I have a jar in my freezer. Been there for years. I also have jars of green, white and black cardamom pods.

 
I wonder if toasting the pods would not intensify them?

I watched this movie a few years ago about an Indian chef. I can't recall the name of the movie but this prodigy chef with a sort of mystical quality is teaching another chef and the biggest lesson was toasting the spices in the pot before adding anything. I started doing this and it has made a nice difference. For example before I make oatmeal I will toast cinnamon and allspice and sometimes add some other spices then add the oats and toast them a bit before adding any liquid. My wife also insists on toasting rice before cooking.

Yes, toasting does make a difference. I toast the pod then take the seeds out.

Prevents the little seeds from burning. I'm with your wife on toasting rice first.
