I made this on a night I wanted something easy and quickly done.

I had all the ingredients, but I did mess with it a bit. I think I fussed with it a little less than the recipe suggests, added less butter and a bit more mirin. I always have a box of baby organic spinach around and frozen scallops. No doubt, I"ll be making it again.

The flavours are all terrific together.
