Made this tonight - you definitely want bread to sop of every bit of the tomato goodness. I thought the dijon was an odd addition but it worked perfect. Because I am an extremely lazy cook (and I thought the shrimp would be overcooked), I didn't broil the feta. Also I used tomatoes from our garden versus Romas. Just took less time to cook down

So you think YOU're lazy. I had a bit of leftover fresh tomato soup and a bit of caprese topping that I use on breads. I mixed the 2 and followed the recipe from the reducing stage, included the wine and lemon juice. It worked. My soup has nothing in it but tomatoes for liquid and all the other ingredients called for were included in the combination of the 2. Very easy dinner. Thank you. My jury is still out on the mustard, but it was a unique flavour addition.
In my defence, however, I did walk all the way to the supermarket to get feta.
