Sixty-Minute Rolls

4 1/2 cups flour -- (4 1/2 to 5)3 tablespoons sugar

1 teaspoon salt

2 envelopes yeast

1 cup milk

1/2 cup water

1/4 cup butter

Combine 3 1/2 cups of flour, sugar, salt and yeast in mixer bowl. Attach bowl and dough hook. Turn to Speed 2 and mix for 1 minute.

Combine milk, water, and butter in a saucepan. Heat over low heat until warm. Turn to Speed 2 and gradually add liquid to flour mixture, about 30 seconds. Mix 1 minute longer. Continue on Speed 2, adding remaining flour, 1/2 cup at a time, as needed. Mix until dough clings to hook, about 5 minutes. Knead dough on Speed 2 for 7 to 10 minutes longer, or until dough is smooth and elastic.

Place in greased bowl, turning to grease top. Cover; place bowl over pan of warm water. Let rise 15 to 30 minutes.

Turn dough out onto floured board. Roll to 1/2 inch thickness and cut out large circle for rolls. Cover and let rise for 15 to 30 minutes or until doubled.

Bake at 425 degrees for 12 minutes or until golden, reversing pans halfway through baking.

Note: These instructions are for use with Kitchen Aide Mixer.

NOTES : You can shape these rolls any way you like, but they are great for sandwiches when rolled and cut into circles.

 
Amy, is it pink, by an chance? I got one 37 years ago & it's missing now but I really enjoyed

the recipes in it. I remember making the Danish pastry (I was pretty young then) and loving it. I've looked every place I can think of for it.

There was alos a Sally Lunn cake and an apple something.
