It's so simple to make, yet so delicious and satisfying. The pumpernickel goes perfectly with it.

SALMON CANAPES

INGREDIENTS:

1/2 cup cream cheese, softened (about 4 oz) (I used 4 1/2 - 5 oz)

1/2 cup smoked salmon, chopped (about 2 oz) (I used Alaskan Sockeye)

2 Tbsp fresh dill, chopped (I omitted this, since I didn't have any on hand)

1/2 red onion, diced (I used sweet onion)

Dense mini pumpernickel rounds, squares, or quartered sandwich slices

DIRECTIONS:

1. Blend the cream cheese, salmon, and dill.

2. Spread the salmon mixture on top of each round. Arrange on a plate and top with diced onion. Garnish with lemon wedges and fresh dill.

Serves 6

 
I was planning on making buckwheat bilinis and smoked salmon for a dinner next weekend...

but maybe I will do this salmon and pipe a mound on the little bilinis and sprinkle with dill!

yum! thanks for using our salmon. such an easy appetizer. we are going to NY in June

Finger Lakes area, for a "cousins reunion" on my husbands side, and we already have orders to bring salmon. it was "oh good, you're coming---bring fish." or maybe it was "don't come unless you bring fish"?
