½ tsp baking soda

Preheat oven at 350°F. Coat an 8x4x2-inch loaf pan with cooking spray and flour and set aside.

combine peaches, sour cream, egg white, and lemon peel.
Mix dry ingredients with wet ingredients just until moistened. Pour batter into prepared pan and bake for about an hour. Yield: 16 servings.
