for those sultry summer days ahead...

simple sugar syrup

2 lb superfine sugar

4 cups water

bring sugar and water to a boil, reduce heat and simmer for 10 min.

cool.

Grapefruit and Vodka Sorbet

1 1/2 cups fresh grapefruit juice (3-4 grapefruits)

1 cup water

1 cup sugar syrup (or to taste, which means a little more or a little less)

1/4 cup vodka.

pour first three ingredients into a prepared ice cream freezer and process until almost firm. add vodka and continue the churn process

until it's thick. transfer to a container and freeze.

Champagne sorbet

1/2 a bottle of champagne (pink or white)

1 1/4 cups sugar syrup

the juice of 1/2 lemon

mix the ingredients and pour in a prepared ice cream freezer and churn until firm. transfer to a container and freeze.

it might be. I haven't made this in some time and I can't handle the sugar to try a batch right now
