REC, sort of, for an appetizer using wonton wrappers baked in mini muffin tins...

...like in the recipe AngK linked to at Epi. They used whole wonton wrappers in muffin tins, but I'm thinking I'll halve or quarter them and put in little mini muffin tins.

Press the wrapper down into the tin and bake at 350 degrees F for 4 to 6 minutes, until brown.

Remove them to a baking sheet and fill half to three-quarters full with a chunk of feta cheese and top with a dollop of caramelized onions.

Return to oven to bake until warmed through. Serve immediately (or eat them all yourself before anyone even knows what that wonderful smell is).

Trader Joe's had a similar item on "demo". Thought this might work.

The filling sounds yummy. I recommend spraying

the wonton wrapper lightly on one side with an olive oil spray then tucking the sprayed side down into the muffin tin. I personally find the sprayed skins have a more appealing baked texture than the non-sprayed.

I also find the thin wonton skins to be better as an appetizer cup but the regular ones will work too. If you can find them, the 3-inch by 3-inch size skins are the perfect size for the miniature muffin tins, or as you say, the larger ones can be cut to fit.

At the link you'll find more fillings for these great little wonton cups....a Crab, Ginger and Lime, a Smoked Chicken, Black Olives and Parsley Pesto, and in the same thread there's one for ahi tuna tartar.

We did small dice pears, a chunk of brie, a dab of honey topped with a pecan

and baked for about 10 minutes at 375°F. I used the little frozen philo cups but I think this filling would work in the wonton cups too.

(These must have been really good because there was only one left in the tray when I had a chance to get to it!)

I just made the crab, ginger and lime filling for filo tartlets and I highly recommend it

Pat's recipe is VERY good. Very refreshing and tasty. My guests loved it and asked for the recipe.

I have looked and searched...I can't find the rec...I thought it was Bobby Flay. Won-Tons filled w

chicken, red peppers, and corn. It was very good. I have not made it in a few years. I know that I "cheated" the second time and used a rotisserie chicken that I shredded. Kind of like a fancy chicken salad with the corn, red peppers, perhaps scallions, mayo etc....I am sure this can be replicated/recreated....

It was VERY Good....BUT, they can't be filled ahead. They get mushy!

Barb

Funny, I miss strings here all the time. Just discovered the lavender string and have info to

contribute. I think it's easier for me to miss stuff because I'm one of the folks using Firefox so when I hit the back button I get returned to the top of the page instead of where I previously was (irritating).
