I found this tiny piece of paper torn out from a magazine, Sorry I don't have any more info on the source. It did make for a very good comfort type soup. Very filling also.
Soupe Au Pistou
½ lb. dried white or pea beans
2 qts. Meat or chicken stock
½ lb. green beans cut in 1 inch pieces
3 ribs celery “
3 carrots peeled and “
3 med. Leeks cut in ¼ inch pieces
2 med. Potatoes, peeled and diced
2 lg. tomatoes, peeled,seeded and diced
4 sprigs fresh or 1-2 tbs. dried basil
Salt and pepper
2 oz. vermicelli
3 cloves grlic
2 tbs. olive oil, 3 oz. Gruyere or Parmesan ,grated –About 2/3 cup.
Put dry beans in pan with stock, bring to a boil, cover, cook 20 minutes
Add green beans,celery,carrots,leeks,potatoes,tomatoes, basil, about 1 tsp. salt,
¼ tsp. pepper. Cover and cook till beans are almost tender – about 1 hour and 15 minutes.
Add vermicelli, cook 10 minutes longer, stirring occasionally. Meanwhile crush garlic
In mortar to make paste, stir in oil.Add to soup with cheese just before serving. Adjust
Salt and pepper .
Makes about 2 ½ quarts or 6 generous servings.
