We love cooking salmon and trout on cedar planks. One night, I couldn't find my recipe, so I tossed together whatever sounded tasty to me. We loved the result, as did my daughter and my sister, who does not always love my food. I actually managed to remember what I had used, so here it is. Many of you will not like it, because it is sweet, but even my husband who did not take to my family's sweet South African Jewish main courses, likes this.
Spice-Rubbed cedar plank salmon.
Soak the plank.
Mix:
1 tsp paprika
2-3 tsp raw sugar
½ tsp sea salt
¾ tsp mustard powder
¼ tsp onion powder
¼ tsp garlic powder
¼ tsp chipotle chile powder
¼ tsp blackening spices
Plop salmon on the plank. Rub the mix over the salmon. Marinate for at least 15 minutes. Drizzle with 1 tbsp honey mixed with 1 tbsp apple cider vinegar.
Cook on grill for 12 - 15 minutes depending on the thickness of the salmon.
