We love cooking salmon and trout on cedar planks. One night, I couldn't find my recipe, so I tossed together whatever sounded tasty to me. We loved the result, as did my daughter and my sister, who does not always love my food. I actually managed to remember what I had used, so here it is. Many of you will not like it, because it is sweet, but even my husband who did not take to my family's sweet South African Jewish main courses, likes this.

Spice-Rubbed cedar plank salmon.

Soak the plank.

Mix:

1 tsp paprika

2-3 tsp raw sugar

½ tsp sea salt

¾ tsp mustard powder

¼ tsp onion powder

¼ tsp garlic powder

¼ tsp chipotle chile powder

¼ tsp blackening spices

Plop salmon on the plank. Rub the mix over the salmon. Marinate for at least 15 minutes. Drizzle with 1 tbsp honey mixed with 1 tbsp apple cider vinegar.

Cook on grill for 12 - 15 minutes depending on the thickness of the salmon.

Wigs, here is the recipe that came with the plank. It is also very good.

It was on the next set of planks I bought. This time I typed it into my recipes file.

Honey Peppered Salmon on Cedar Plank

1 cedar plank
3 lb salmon fillet
1 T fresh cracked black pepper
½ t cayenne
½ t ancho chile powder
½ t paprika
1 t fresh rosemary, minced
½ t garlic powder
½ t sea salt

¼ cup honey
¼ cup rice vinegar

Preheat barbecue. Moisten cedar plank by soaking with water, weighed down with a plate.

Place salmon, skin side down, on the moistened plank and season with herbs and spices. Allow the fillet to marry with the seasonings for 5 minutes. Mix the honey with the rice vinegar and brush mixture onto salmon, evenly coating it.

Place plank and salmon in center of hot grill and close the lid. The plank will start to smolder. Cook for about 20 minutes.

Remember plank will be HOT!
