This cake was just what I wanted to find. The spices really stand up and get noticed although without fresh nutmeg, it would not have made it.

I used Planters Punch rum as (as I said in my review) the flavours mimic those in the cake. And of course, I didn't throw out the leftover rum. I included it at the last moment of mixing.

I used Mac apples since they were 25 cents a pound and I cut them in larger pieces as I want to find the fruit in these cakes.

In fact, this is so good, I just may make a couple to freeze.

Marg...this looks right up my alley! It stays moist for days and it's packed with spice? YUM!

 
how did I miss this? now at the top of my to try list. funny, the other reviewer

left out the ginger, rum, raisins, and nuts---aaarg! what did she do to that recipe!
