Spinach Ricotta Stuffed Tomatoes
1 10oz pkg frozen chopped spinach
8 ripe tomatoes
salt
1 c finely chopped onions
3 tbsp olive oil
1/4 tsp grated nutmeg
salt and pepper
1 c ricotta cheese
2 egg yolks
1/2 c pine nuts
1/2 c freshly grated parmesan cheese, divided
1/2 c chopped Italian parsley
Thaw and drain spinach. Wash and dry tomatoes. Cut off the tops and gently remove the tomato seeds and pulp. Season davities with salt. Drain tomatoes upside down on paper towels.
Saute onions in olive oil over low heat in a skillet for 20 minutes or until translucent. Add spinach and nutmeg. Season with salt and pepper. Cover and cook for 10 minutes.
Beat ricotta cheese and egg yolks together in a mixing bowl. Add cooked spinach, pine nuts, 1/4 c of the parmesan cheese and parsley and mix well.
Blot the inside of tomatoes. Stuff tomatoes with spinach and cheese mixture. Sprinkle tomatoes with the remaining 1/4 cup parmesan cheese. Bake in a preheated 350 degree oven for 20 minutes.
