I "harvested" my first spinach yesterday from my vegetable garden and made this spinach salad to go with dinner (we had turkey breast BBQ)

Spinach salad

Enough spinach leaves to feed four, stemmed, washed and dried (about 1/2 pound)

4-5 Tbs pine nuts, toasted in a dry pan over medium heat and left to cool (I let them cool on a plate).

Dressing:

2 Tbs tahini

1 garlic clove, crushed (I used my garlic press)

juice from 1/2 lemon

4 Tbs hot water

salt

pepper

2 Tbs naturell youghurt

Mix tahini, garlic, lemon juice and hot water in a small bowl.

Then add yoghurt and salt and pepper to taste.

Toss salad with dressing in a bowl and sprinkle toasted pine nuts on top.

 
This sounds good! and something to try in your next salad:

I had some packaged salad yesterday, the kind that has all the ingredients and dressing in one bag, and it looked as if there were pine-nuts in it. It turned out that the pine-nuts were soy nuts and they were great for adding a very nice crunch to the salad.
