4 med. red onions
1# fresh spinach, stems removed
2 tbsp melted butter
1/4 c half and half
salte and white pepper to taste
grated parmesan or gruyere cheese
Peel onions and cut in half horizontally; steam about 12 mins. or until tender, but not soft and mushy. Cool; remove center of onions and dice. Leave shells inact.
Wash spinach and cook 1 min. using only water that clings to leaves; drain and chop.
Saute spinach and diced onion in butter and
half- and-half until fairy dry; season with salt and pepper.
Fill onion shells with spinach mixture; sprinkle with cheese. Bake in a greased shallow pan at 350 until onions are thoroughly heated through
