other day - paid $1.50 a piece for them there - made them at home for much less (and they're better):

Spinach Feta Triangles (same taste as spanakopitas, different shape, no eggs)

Makes about 12 hand-size sandwiches

1 Tbs olive oil

1 tsp butter

1/2 small onion, chopped

1/2 a 10-oz package frozen chopped spinach, thawed/squeezed dry

1 tablepoon fresh lemon juice

1/4 tsp freshly ground nutmeg

1/4 tsp black pepper

1 tube large ready-to-bake croissant rolls

3 oz feta cheese

milk

Heat oil and butter in a pan over medium heat; saute onions. Stir in spinach, lemon juice, and spices.

Preheat oven to 375F while you form the croissant dough into triangles about 2 inches on each side. Place about a tablespoon of mixture into each triangle and top with a little chunk of feta cheese (can omit, the store-bought ones didn't have cheese in them). Fold up corners so they meet in the middle and press edges firmly to seal.

Place on baking sheet, seams up, about 2 inches apart. Brush pastries with milk and bake until golden, about 12 minutes. Cool slightly and transfer to plate - store covered. Best warm!

 
Then I got to thinking, why not "American, Italian, etc." insides too..

The one I bought was made with pizza dough, not croissant dough. That might be an interesting one with the savory ones.

2-Chicken Parmesan - cooked chicken, pasta sauce, Parmesan cheese, chopped basil, and garlic

3-Sloppy Joe - barbeque ground beef with cheddar cheese, pinto beans, and sauted onion

4-Diced cooked turkey with avocado and tomato chunks, garlic, and cayenne pepper

5-Chicken Dijon - shredded chicken with Dijon mustard, cooked broccoli, and tarragon

6-Ground cooked pork with diced apple, dill weed, curry powder, and crumbled bacon

7-Diced ham, Swiss cheese, cream of celery, and white wine

8-Tomato chunks, mozzarella cheese, and sliced black olives, maybe some diced pepperoni too

9-Buffalo Blue - cooked chicken breast with celery, hot sauce, and a small wedge of blue cheese

10-Sweet potato, chopped leeks, grated orange zest, and cinnamon

11-Chinese takeout - cooked pork, sliced water chestnut, hoisin sauce, chopped peanuts, and snow peas

12-Sliced ham, cranberries, carrots, asparagus, and cracked black pepper

13-Raspberries sauteed in butter, and balsamic vinegar with or without gouda; with or without chicken breast

Hmm, who says they can only be made into savory items. Dessert triangles:

14-Camembert topped with cherries simmered in Grand Marnier, golden raisins

15-Bananas, nutella, and a little bit of peanut butter

16-Apricots, cream cheese, ginger, and walnuts

17-Dried figs, marscapone, and orange zest

18-Pitted dates, orange marmalade, and Kerrygold Dubliner cheese

19-Strawberries, orange sections, shaved white chocolate, and mint

20-Triple-berry, maple syrup, and Greek yogurt

21-Cocoa Mocha - a few grains of instant coffee, marscapone cheese, and a Hershey's kiss

22-Mint chocolate chip - semi-sweet chocolate chips, crushed peppermint candy, and a few drops of vanilla extract

23-Apple slices, caramel topping, and crushed walnuts

24-Carmelized pears and a few curls of asiago cheese

25-Peach Melba - Diced peaches with and a teaspoon of raspberry jam and vanilla yogurt

26-San Francisco Treat - a small chunk of Ghirardelli chocolate and orange zest, mint optional

27-Blueberry cheesecake - blueberries, plain (or not) yogurt, and a squeeze of lemon juice

28-S'mores - a square of Ghirardelli chocolate, a few mini-marshmallows, and a smidge of honey

29-cherries, milk chocolate, ricotta cheese, amaretto

30-raspberries, cream cheese, and some white chocolate

And here are more. Posting them so I have them handy next time I want to try something new and/or handy for an impromptu summer picnic:

31-Gyros - roast chicken, lemon zest, garlic-dill sauce, parsley or tabouli

32-Strips of good deli turkey, sesame dressing, a little soy sauce, and if you're game, some wasabi sauce

33-B"L"T - Bacon, arugula, and diced tomato with a dab of sour cream

34-Stir-fry beef cooked rare, strips of red and green sweet pepper, and American cheese

35-Marinated artichokes, lemon, and curls of nutty Parmesan cheese

36-Mexican - refried beans, cumin, a squeeze of lime, cilantro, and some green salsa

37-Brunch - scrambled egg, American cheese, cream cheese, chopped Canadian bacon or ham, and chives

38-Strawberries, plum jam, and lamb

39-Muffaletta - marinated olives (celery, cannellini beans, carrots, olive oil, cider vinegar, and Italian seasoning) w/capicola, salami, mortadella, and provolone cheese

40-Smoked, shaved turkey with proscuitto and arugula, and mozzarella if desired

41-Chicken Cordon Bleu - cooked, shredded chicken, ham slices, a litle crumbled blue cheese, and a teaspoon of ranch dressing

42-Sauteed onion, mushroom, sour cream, and a sprinkle of cardamom

43-mashed potato, onions sauteed in butter, and fresh parsley

44-corned beef, sauerkraut, Russian dressing, Swiss cheese, and a sprinkle or two of caraway seeds

45-sliced beef (cooked), grated ginger, a tsp of cider vinegar

46-grilled eggplant, chopped/cooked fennel, capers, apples slices, and white pepper

47-precooked sausage, grilled onions, sauteed green pepper, a slice of provolone cheese

48-diced cooked pork, braised fennel, apple chunks, freshly ground black pepper, and sour cream

49-ricotta cheese, spinach, and lemon zest

50-sauteed zucchini, onions, tomatoes, and Parmesan cheese, oregano (from Evelyn's briami recipe)

The possibilities are endless... any more good ones?

 
Cooked and flaked sturgeon or salmon, onions, dill. Another I do is mushrooms,

wine or sherry, fines herbs, garlic; caramelized onions with herb de Provence.

Food and Wine did a sweet one with sliced plums, sugar and cardamom, haven't tried that yet.

Your list rocks, great ideas! I'm printing this off to attach to my packet of dough in the freezer.
