Stuffed and Rolled Flank Steak

Ingredients:

1 flank steak, pounded as thin as possible without tearing

1/ cup balsamic vinager

red wine

1/2 pound stilton

1/4 pound pancetta - sliced very thin

fresh basil leaves

crumble stilton and spead out on the steak. cover with basil leaves. cover with pancetta.

meanwhile reduce the marinade to about 1/4 the original volume.

secure the roll and the end flaps with toothpicks.

grill offheat* for 20 minutes or to desired doneness.

spoon some marinade over steak and baked potatoes if you have some.

*i've found that the easiest way to grill offheat is to put the steak on a roast rack in a baking pan. keep water in the bottom of the pan.
