RECIPE: Rec: Stuffed Pepper Soup

Hi. Saw something like this recently on tv, thought it looked good, wanted to share. Very good comfort-food on these cold and snowy days.

2 lbs beef, ground

28 oz tomato sauce

28 oz diced tomatoes, undrained

2 cup long grain white rice, cooked

2 cup green bell pepper, chopped

1 Tbsp red wine (or any other type) vinegar

2 each beef bouillon cube

1/4 cup brown sugar, packed

2 teaspoon salt

1 teaspoon pepper

Brown beef, drain, and add remaining ingredients. Bring to a boil, then reduce heat and cover, allowing to simmer for 45-50 minutes.

Thanks, Dawn! The temperature was only 10º F. here this morning, and I'm ready for a good comfort food in the form of hot soup. This sounds like JUST the ticket.
