With my husband being diabetic and having a horrendous sweet tooth, I am always on the lookout for sugar-free recipes. I tried this and it turned out pretty good. I am going to be making more "fluff" recipes. I am going to use sf vanilla pudding with blueberries and sf chocolate pudding with raspberries. To be honest, these are not gourmet by any stretch, but for someone really craving sweets, they aren't bad. I personally could not tell the difference between these and the traditional. You might try substituting whipped cream for the Cool Whip.

Sugar-free Watergate Salad

Amount Measure Ingredient -- Preparation Method

1 1/3 ounces Instant Sugar-free Pitachio Pudding Mix16 ounces Cool Whip® -- thawed

15 1/2 ounces crushed pineapple

1/2 cup chopped pecans

Mix all ingredients together, and refrigerate.

Oh, we make this and call it Green Goop...only it also has SF yogurt

Mix the vanilla yogurt with the pudding...that way you don't get any lumps. Add the pineapple, then fold in the coolwhip and nuts last.

Adds a bit more tang to the dish...it's addictive.

 
Watergate Salad (

Watergate Salad (AKA The Green Stuff)

1 8 oz. Cool Whip (fat-free, lite, OR regular)
1 small box pistachio pudding mix (sugar free or regular)
1 8 oz. can of crushed pineapple (packed in water or own juice)
1 cup of mini marshmallows
1/2 cup of crushed pecans (optional)

Dump it all in a large bowl and stir well. Let it chill at least for 1 hour before serving.
