I have been trying to formulate a "fresh" salsa to use. I have learned that unless it is summer, you are better off using canned tomatoes. I adapted this recipe from one at Bon Appetit called Party Salsa, which is below mine. You might want to start with one jalapeno, and work up your heat from there. I think pickled jalapenos might be good in this too. I divided the finished recipe in half and added some chopped chipotles in adobo, which was very good also. I haven't frozen this yet, but it should be fine since I am using canned vegetables for the most part. For tortilla chips, I recommend On The Border brand chips. Once I started buying these all the others pale in comparison.

Superbowl Salsa

10 ounces canned tomatoes30 ounces canned tomatoes with green chiles -- (Rotel, 3 cans) divided use

10 large cloves garlic

1 white onion -- coarsely chopped

3 large jalapeno peppers -- coarsely chopped

1 bunch fresh cilantro -- coarsely chopped

4 ounces canned mild green chiles

1 bunch green onions -- thinly sliced

1 tablespoon ground cumin

1 teaspoon oregano leaves -- crumbled

1/2 lemon -- juiced

1/2 lime -- juiced

salt -- to taste

Process stewed tomatoes, one can Rotel, garlic, onion, jalapenos, and cilantro until it is a smooth (I used a stick blender so it remained a little chunkier than in a food processor or blender). Add remaining two cans of Rotel, the green chiles, green onions, cumin, oregano, lemon and lime juices. Mix well. Add salt to taste. Refrigerate or freeze. Best made a couple hours ahead so the flavors can meld.

Serving size approx. 1/3 cup.

Amount Measure Ingredient -- Preparation Method

1 to 16-ounce can stewed tomatoes -- ¥well drained1 medium onion -- quartered

10 large garlic cloves

3 jalapeño chilies -- stemmed, seeded

1 bunch cilantro -- stems trimmed

4 large tomatoes -- seeded, quartered

1 can diced green chilies -- (4 ounce)

6 large green onions -- chopped

1 tablespoon ground cumin

3 tablespoons fresh lemon juice

4 teaspoons fresh lime juice

Tortilla chips

Process stewed tomatoes, onion, garlic cloves, jalapeños and half of cilantro in processor to chunky puree. Transfer mixture to large bowl. Place fresh tomatoes, diced green chilies and remaining cilantro in processor and blend until tomatoes are finely chopped. Add to mixture in large bowl. Mix in green onions, cumin, and lemon and lime juices. Season salsa to taste with salt and pepper. Cover and chill until cold, at least 1 hour and up to 4 hours. Serve with tortilla chips.
