The Chew (yes, I seem to be watching Day Time TV now) and one day Michael Symon made this. I made it yesterday and it is really good. It was a perfect side with our Honey Baked Ham. I have really started to like The Chew but they really need to change the recipe layout. It's like it's written for a child. It's aggravating to me

Sweet Potato Gratin

Michael Symon

1 1/4 Cup Parmesan Cheese

2 Cups Heavy Cream

2 Red Chiles very finely minced

Salt

3 garlic cloves

1 Cup scallions chopped

6 Sweet Potatoes

Preheat oven to 375F.

In a small sauce pot add the heavy cream and bring to a simmer. Add scallions, garlic, chiles, salt and 1 cup Parmesan.

Cut sweet potatoes into 1/4-inch-thick slices.

Add a layer of sweet potatoes to the roasting pan. Pour some of the cream mixture over the potatoes. Add another layer of potatoes and some more cream. Continue layering until all of the potatoes and cream have been used. Top potatoes with remaining grated Parmesan.

Cover pan with aluminum foil and bake in over for 35 to 50 minutes. Remove foil for the last 10 minutes of cooking. Remove from oven and serve.

makes regular scalloped potatoes, but might be up for a change with this dish. thanks.

 
Your welcome. It is a nice change up and I think you'll enjoy it. We

both agreed today that it is pretty rich so a little goes a long way. I'll make it again
