Rec. Sweet Potato Pudding

3 c diced raw sweet potato

3/4 c brown sugar

1/2 c milk

2 eggs

1/2 tsp ginger

1/4 c butter

Put all ingredients in blender, blend until completely mixed and potatoes are very smooth.

Pour into a buttered 1-1/2 qt casserole. Cook at 325 degrees about 50 mins. or until knife inserted in center comes out clean.
