I don't really like dipping crab in fresh butter, so a couple years ago I went searching for alternatives. I found this recipe on Chowhound, and served it at a crab feed here at the house, along with a couple others. This was the hit dip for sure. I'm serving it again tonight to guests and thought I'd share here. Super simple, but absolutely a perfect balance of sweet, salt, sour, and heat. It would be good for spring rolls too. Yum!
A Thai style dipping sauce
1/2 cup rice vinegar
1/2 cup sugar
2 cloves garlic
1/4 tsp. salt
1 to 1 1/2 tsp. red pepper flakes
Cook sugar and vinegar in small pan over medium heat until the sugar dissolves, sirring frequently. Mash the cloves of garlic with the salt into a paste and stir in and then add the red pepper flakes. Make ahead and serve at room temperature.
