Have been staring at this recipe for ages and finally decided to give it a try because every summer I hear people rave over 'Tomato Pie'. This version doesn't include a top crust and I couldn't imagine covering the beautiful crust that the cheese and mayonnaise makes. Diet food this is not:)

I did not blanch and peel the tomatoes and it was still wonderful. Yes, there was the occasionally errant tomato peel that came apart from the slice of tomato but I needed to put the recipe together fast. I thought the non-peeling was well worth the time savings.

I have heard about tomato pie before, but that much mayo

seems so mayo-y, I'm not a fan of mayo much. I like it on cheese sammiches, and I add a T in my guacamole, and some in deviled eggs, and tuna salad, chicken salad. I think that's it. I know when mayo sits out in heat too long it gets yucky yellow.

I'm curious though as to what it does when baked, chemical reaction speaking? Taste?

 
Kendall, considering this is a Paul Deen recipe, the amazing part is it contains NO butter! *g*

 
Around here (Syracuse, Utica), Tomato Pie is just a square/Sicilian pizza, but

but oooh, that looks good! Yikes, imagine the calories, but I could probably only eat a couple of bites before getting full anyway! Maybe that's the point.

Thanks for posting... might be good as an appetizer. What consistency does the mayonnaise/cheese topping get when it bakes?

 
Yes - quiche-like sort-of, but not as eggy. I stayed away from the recipe because of the mayo

but now, after tasting it, it's just divine. Worth the splurge. That being said - I'm sure you could cut down the amount.

 
This is the one I make all the time but without

the mozzarella cheese. Not eggy at all, but very rich and tasty.
One trick, layer a layer of tomatoes on the bottom, then the basil and green onions followed by another layer of tomatoes. That way when you spread the mayo/cheese mixture, you don't get the basil and onion all in the topping.
