This is probably one of the oldest dessert recipes I know.
It was very popular here when people didn't have a lot of money. Then, as the oil coloured the country rich, it disappeared from the menues.
Now, chefs have again turned to the good old recipes, and Troll cream is facing a new era of fame and glory.
Troll creme.
8 egg whites
2 Tbs sugar
2 ts vanilla sugar (can be omitted)
2 cups fresh cow berries (kinda like cranberries - but smaller and growing wild) OR fresh lingonberries
Put all ingredients in a bowl.
Whisk with a hand held electric mixer till the egg whites are stiff and forms peaks.
The cream will now have turned wondefully pink.
Troll cream is served with cookies or waffels or - as many of us do - we just eat it plain smileys/wink.gif
Over here we usually serve it as a dessert after dinner - often with coffee.
