I have not tried this but it looks good for a summer menu....from The Enlightened Gourmet
For the Apricot Cream
4 tbsp plain yogurt
4 tbsp cottage cheese
2 tbsp all fruit apricot (or flavor of your choice) jam
1 ripe mango
1 ripe kiwi
1/2 tsp cinnamon mixed with 1/2 tsp sugar
4 ripe strawberries, with stems, if possible
To prepare the cream: process the yogurt, cottage cheese and jam in a food processor or blender until smooth, about 1 minute. Keep chilled (this will keep in the refrig. about 2 days)
Peel and slice the mango. Fan the slices on 4 dessert plates. Peel and slice the kiwi very thinly. Cut rounds in half. Make circles with the kiwi at the base of the mango fans. Mound cream in the circles, sprinkle the cream with cinnamon sugar, and top with a strawberry.
