TURNIP, APPLE & PEAR PUREE

2 tbls unsalted butter

1 lb turnips, peeled and chopped

2 Granny smith apples, peeled, cored & chopped

1 Bartlett pear, peeled, cored & chopped

1 tbls fresh lemon juice

pinch of nutmeg

1/2 tsp salt

1/4 tsp white pepper

In a large saucepan, melt the butter and, stirring, saute the turnips, apples and pear until soft but not brown. Add enough water to barely cover (1 - 1/2 cups approx.) and cook, covered, over moderate heat until very tender. (45 min approx.) (Add more water if mixture becomes to dry while cooking.)

With a hand held mixer or in a food processor,

puree the mixture with the lemon juice, nutmeg

and salt & pepper. Serves 6

it's great with duck and pork roasts and turkey. I posted these recipes in 1998 and ...

haven't used most of them in awhile. some I had even lost. I just thrilled to find them again!
