a bite of this last night and it was really good. I work at Publix and my store had their annual Holiday Fest last night. Live music and lots of different stations to sample food. This came from "Aprons". For those on the west coast that don't have Publix, Aprons is a cooking station that they create healthy and quick meals. They rely heavily on frozen type prepared ingredients but sometimes I find something that I really liked and will adapt it to use fresh where I can. Anyway, this is very light and souffle like. This will come in handy when you want something fast and tasty.

Amount Measure Ingredient -- Preparation Method
1/4 cup + 2 tablespoons caramel ice cream topping -- divided1 -6 oz. graham cracker pie crust,
1 -2 oz. package chopped pecans -- divided
1 cup reduced fat milk
2 -4 oz. boxes vanilla instant pudding mix
1 cup canned pumpkin
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
8 ounces frozen non-dairy whipped topping (softened -- divided
Pour 1/4 cup of the caramel topping into pie crust; sprinkle with 1/3 cup of the pecans.
Whisk together in large bowl, milk, pudding mixes, pumpkin, cinnamom, and nutmeg until well blended. Fold in 1 1/2 cups of the whipped topping; spread mixture evenly into crust. Chill at least 1 hour.
Top with remaining 1 1/2 cups whipped topping and 2 tablespoons each caramel topping and pecans just before serving.
