I went to the local home brewery and bought some pale malt as Richard suggested. The cookies call for 1/2 C malted milk powder and I subbed 2T of the pale malt. They are very delicious, and are better baked when its not raining-for 10 days straight-this keeps them from spreading too much! I think next time I will go for 2 1/2 T of malt just to see the difference.
Thanks for the suggestion Richard you can definitely taste the malt in the cookies. I think I have to try brownies with this malt next.....
