Rec. Upper Crust Catering's Broccoli Strawberry Salad - I doubled this for a party. Everyone asked

for the recipe. I also added dried cherries (I'd seen these in another broccoli salad) and it was a wonderful addition to an already great tasting salad.

Upper Crust Catering's Broccoli Srawberry Salad

4 cups of fresh broccoli florets, cut into small pieces

1/4 cup raisins

1/4 c dried cherries (my own addition)

1/4 cup peanuts

1/4 cup peeled and grated carrot

1/4 cup chopped red onion

1 cup fresh sliced strawberries

Dressing:

3/4 cup mayonnaise

2 tablespoons white vinegar

1/4 cup sugar

Combine broccoli, raisins, peanuts, carrots, onion and strawberries in a serving bowl.

In a mixing bowl, whisk together mayonnaise, vinegar and sugar until sugar dissolves. Just before serving, pour about half of the dressing over salad; toss. Taste; add more dressing if your tastes dictate.

Serves 4.

 
Since all I can find are flavorless fresh strawberries, do you think you could use frozen instead?

 
Dawn, my first thought is wait til spring for fresh. But maybe if you sliced frozen thin and

sprinkled with a little sugar, perhaps it would be ok. If you do make it with frozen berries, let us know if it was satisfactory if fresh isn't available.
