Vanilla Bean Vinaigrette
2 c salad oil
1 ea. vanilla bean split or 1/2 oz extract
Steep beans in warm oil (like making tea). remove beans before adding to base. If using extract there is no need to heat oil and add extract after adding oil to base.
Base:
1/4 c sugar
1/4 c water
1 c orange juice
Combine sugar and water in a heavy bottom pot and bring to a simmer. Allow to simmer till sugar is caramelized.
Pour into a metal or Pyrex bowl over ice and stir till cooled. Slowly whisk in orange juice. Slowly add vanilla oil while continuously whisking.
Serve over a fruit/lettuce salad.
