3-4 large carrots
4-5 large zucchini
2-3 large raw potatos
1/2 an onion
Coarsely grate/chop, and then add the following ingredients
3 eggs
1 large container cottage cheese
1 box/'cake' feta cheese
8 oz. plain yogurt
basil, oregano, black pepper - as you like it.
Put the mixture in a greased pan, and bake, medium heat, for about 45
minutes. That's all there is to it.
Variations on the theme?
There are endless variations. You can omit the eggs if you are cholesterol
conscious; you may add any sharp cheese (cheddar goes well); you may mix
and match with alternative vegetables (broccoli, cauliflower, spinach etc.),
You may replace the yogurt with sour cream, or combine some of each. You
may come with more variations as you go along!
