This was a terrific soup for using up the last of the garden. Jammed with vegetables and not one single herb. Had me puzzled until I tasted it.
I used 2 slices of bacon as I wanted the smokey flavour with the beans. That worked well. I also had baby Swiss chard, so I chopped up the stems as well as the leaves.
I used one can of drained white kidney beans and processed another can. I think that worked well too. Whenever I want to make soup with beans, I just get too impatient for all that soaking. Don't know why I even buy dry beans.
It needs the Parmesan and a little EVO over the top helped as well.
This is going to be a favourite and so healthful.
Another temptation will be to try a garlic rubbed crostini on top before sprinkling with the cheese.
