1 2oz jar diced pimientos

1/2 c cracker crumbs

1/2 c grated parmesan cheese

1/2 c finely chopped unsalted peanuts

1/2 c chopped fresh mushrooms

1/2 c melted butter

hot cooked cauliflower, broccoli or asparagus

Combine first 5 ingredients; add melted butter and toss well. Place cooked vegetables in a shallow casserole dish, sprinkle with toppinig and broil until golden brown.

Spoon excess topping into an airtight container, stire in refrigerator. Makes 2 cups of topping
