Hi all--

Back after my hiatus--anyone miss me? smileys/smile.gif Between project deadlines and vacation, I haven't been in the kitchen much lately. Things have calmed down and I'm back to it.

I had to use up some chicken thighs (boneless, skinless) and came across this recipe for a Vietnamese-type marinade on the Washington Post website. It was a really nice recipe and fast for a weeknight. I served it with steamed snow peas and jasmine rice.

I haven't tried fish sauce but I'll give it a try.

Amanda, I have Into the Vietnamese Kitchen, the book this recipe is based on & it's fab!

I made pho stock from it yesterday and it turned out so good...I couldn't believe *I* made it! Looking forward to trying more recipes from this book. Definitely on my "highly recommended" pile.
