Watercress Soup
2-1/2 c (about 2 bunches) watercress
2 (1/2") thick slices onion
1 3" slice celery
1 tbsp sugar
1 tbsp cornstarch
3 c chicken bouillon, divided
1 13oz can evaporated milk
1 tbsp butter
1 tsp salt
watercress leaves (opt)
Combine watercress, onion, celery, sugar, cornstarch and 2 c bouillon in container of electric blender; process until smooth. Pour watercress mixture into a saucepan, add remaining 1 c. bouillon, and stir well.
Bring to a boil. Reduce heat, simmer 10 minutes, stirring constantly. Stir in evaporated milk, butter and salt; simmer 3 to 5 minutes, stirring occasionally.
Garnish individual servings with watercress leaves, if desired. Serves 8-10.
