I bought this at Wegman's chef station and it was very yummy.
Watermelon Gazpacho
Makes: 6 cups Active Time: 10 min
1/2 cup sugar
1/2 cup raspberry vinegar
1 cup fresh 1/2- inch papaya chunks
1 cup fresh 1/2 -inch pineapple chunks
4 cup peeled, seeded fresh 1/2- inch watermelon chunks
8 Tbsp chopped fresh cilantro
8 Tbsp chopped fresh mint leaves
2 tsp finely chopped seeded Habanero chili (use gloves)
Combine sugar, vinegar, papaya, pineapple, and watermelon in blender; blend 1-2 min, until smooth.
Stir in cilantro, mint, and chili pepper.
Option(s): Besides refreshing breakfast soup, may be served in shot glasses for party appetizer.
